Lon Symensma was only 14 when he took a job at a local diner near his home in rural Iowa and discovered how much he enjoyed the demanding environment of a professional kitchen.

Since then he has traveled the world, including a full year in Southeast Asia and China, to expand his culinary expertise. In 2001 he joined esteemed chef Jean-Georges Vongerichten at his eponymous restaurant in New York City and by 2007 had risen to Executive Chef of the acclaimed New York restaurant, Buddakan.

Chef Lon moved to Denver and opened ChoLon Modern Asian Bistro in the fall of 2010 to critical acclaim for his twists on classical dishes that represent the crisp, vibrant flavors of Asian cuisine. The chef is a long-time supporter of the notion that humanely-raised food is not only the right thing to do, but also the best way to produce delicious, high quality dishes.
